Fish, friends and chemistry

Mondays have turned into a weekly study session for me and a dear friend of mine. We are both taking chemistry this semester and enjoy each other's company so it makes sense lol Well, I found out she isn't the best cook in the world (which just means she needs more practice) So I decided at our weekly study sessions that I would cook for her and show her some of my easier delicious recipes so she can surprise her hubby when he comes home from deployment :-) she told me she isn't the biggest fan of fish, so naturally that's what I made for dinner for us last night teeheehee. We had broiled parmesan crusted tilapia, chips and hummus and salad (of which we only ate the croutons). This fish recipe is one of my hubs' favorite meals and he was happy I brought home leftovers for him lol needless to say its way easy and family approved :-) here's the recipe:

4 tilapia filets
1/2 to 3/4 c shredded parmesan cheese
1/4 c butter
3 Tbsp Mayo (I used a lithe version)
3 Tbsp lemon juice
Garlic powder (or granules), onion powder, salt, pepper, and basil to taste.

1) heat broiler
2) cover cookie sheet with foil and spray with non stick cooking spray
3) lay fish onto cookie sheet
4) mix all other ingredients in a medium sized bowl
5) drop equal amounts of cheese mixture onto each fish filet and spread to cover entire filet
6) place in oven and broil for 6-10 minutes until the topping is nicely browned and fish flakes easily
7) serve and enjoy :-)

  1. Why not just put the croutons in a bowl and eat them with a spoon? ;D
